Il Rustico di Casa Asaro is freshly produced Extra Virgin Olive Oil bottled immediately after the first pressing, in Mid-October. It is undecanted, therefore appearing even cloudier and greener, more herbaceous and pizzicante in flavor. Il Rustico is produced only once a year, always in October. Like all genuine Olive Oil, its appearance in the bottle is subject to changes over the passing of a few months. It became clearer as the sediments drop to the bottom of the bottle and changes to a more golden hue.
What makes this Unfiltered Extra Virgin Olive Oil so special is the high quality of the olives pressed and its cloudy, dark green qualities.  This unfiltered oil has these attributes because it is cold-pressed within hours of the olive picking, and exactly when is pressed goes into the bottle giving the oil a grassy, herbaceous, and buttery taste with notes of artichoke & almonds with a slightly peppery finish.
